Whole Wheat Refrigerator Bread Recipe
- 6-7 c. whole wheat flour
- 2 pkg. yeast
- 2 teaspoon salt
- 1/3 c. honey
- 3 tbsp. soft butter
- 2 1/2 c. warm water
- 2 tbsp. soy flour (optional)
- Vegetable oil
- In a large bowl, stir together 2 c. flour, yeast and salt.
- Add in honey and butter.
- Pour in warm water all at once and beat with an electric mixer for 2 min at medium speed.
- Add in 1 1/2 c. more flour; continue to beat till thick and elastic (about 1 minute).
- With a spoon, stir in 2 more c. flour.
- Gradually add in more flour till soft dough is formed.
- Turn out onto lightly floured board.
- Knead 5-10 min till smooth.
- Cover with towel and let rest 10 min.
- Punch down and divide in 2.
- Shape into smooth loaves and place in well greased loaf pans.
- Brush tops with oil and chill 5-24 hrs, cover with towel.
- Preheat oven to 400 degrees.
- Let bread stand out for 10 min.
- Bake 35-45 min or possibly till done.
- Remove from pans immediately.
