Crisp Dressed Baby Vegetables

  1. Blanch the beans in a saucepan of boiling water until bright green.
  2. Drain & refresh in a bowl of iced water, Drain well.
  3. Combine oil, vinegar and mustard in a small jar, season well with salt & freshly ground black pepper.
  4. Shake well to combine.
  5. Combine beans, carrots, radishes, onions & dressing in a bowl.
  6. Toss gently to combine.
