Light Chocolate Chip Oatmeal Pancakes for Two
- 12 cup rolled oats
- 14 cup nonfat milk
- 14 cup water
- 3 tablespoons whole wheat flour
- 1 egg white
- 1 teaspoon baking soda
- 12 teaspoon white vinegar
- 1 tablespoon chocolate chips
- 1 tablespoon Splenda granular (more or less to own personal preference)
- Pour water and milk over oats, let sit for 10 minutes, or until oats has noticeably soaked some of the liquid.
- Add baking soda, splenda and flour.
- Mix in egg white and white vinegar to combine well.
- Stir in chocolate chips.
- Spray skillet and set over high heat.
- Wait until well heated, about 5 minutes.
- Add batter, 1 tbsp at a time, and tilt the pan so that it spreads and the size becomes bigger.
- Wait until bubbles set, about 1 minute, before flipping.
- Repeat for the remaining batter until finished.
- Serve hot!
