Squid On The Barbecue
- 2 large squid per person
- 1 A good pinch of sea salt
- 2 garlic, minced or finely chopped
- 1 handful of parsley or coriander, finely chopped
- 50 ml olive oil, extra virgin
- Prepare and wash squid if they are not already prepared at purchase.
- Place squid in a bowl and add the salt and garlic.
- Mix well and place in fridge 2+ hours before cooking.
- In a small jug place the chopped coriander or parsley and add the olive oil.
- I aslo added a pinch of garlic salt.
- Set it in fridge to infuse until needed.
- When its time to grill shake the excess salt off the squid and place one by one on the barbecue.
- Place squid on barbecue and grill for 5-7 minutes on each side depending on how thick the squid is.
- Drizzle the olive oil over the squid once its ready to serve.
