Arizona Albondigas Soup Recipe

  1. In a 5- to 6-qt pan over high heat, combine broth, tomatoes (including juice), 1/2 tsp.
  2. oregano, and 1/4 tsp.
  3. each cumin, garlic pwdr, and pepper; cover pan and bring to a boil.
  4. Meanwhile, in a bowl, mix beef, rice, egg, salt, and the remaining oregano, cumin, garlic pwdr, and pepper.
  5. When broth is boiling, drop beef mix in 1-inch balls into broth.
  6. Cover pan, reduce heat, and simmer till rice in meatballs is tender to bite, about 10 min.
  7. Stir in green onions and cilantro.
  8. Ladle into soup bowls.
  9. This recipe yields 4 servings.
