Nathan's Dirty Rice
- 2 pounds ground beef
- 2 pounds ground pork
- 1 pound chicken giblets (no livers) ground
- 1/2 pound butter
- 1 large onions diced
- 1 cup scallions, spring or green onions diced
- 1 medium green bell peppers diced
- 2 cups celery diced
- 2 x bay leaves remove after 2 hours
- 1/2 cup parsley leaves chopped
- 6 cloves garlic minced or crushed
- 1 tablespoon kosher salt
- 1/2 tablespoon black pepper
- 18 cup worcestershire sauce
- 1 cup heavy whipping cream
- 8 cups rice pre-cooked
- Combine all ingredients except cream and rice in a pot, cover and simmer for four hours, stirring occasionally.
- After four hours add the heavy cream and simmer for 30 minutes.
- Add the pre-cooked rice and simmer 30 more minutes.
- (Note: The amount of rice you use is purely subjective.
- If you want to make the dish stretch farther use more rice.)
- For best flavor results allow the finished dish to refrigerate over night and serve the next day after reheating for about an hour.
