Wellington Lamb Burgers
- 1 lb ground lamb
- 1 medium onion, grated
- 1 pinch ground nutmeg
- 2 teaspoons horseradish sauce
- 1 lemon, zest of
- salt & freshly ground black pepper
- 2 large eggs, hard-boiled
- 2 tablespoons mayonnaise
- 1 tablespoon fresh parsley, chopped
- Blend the ground lamb with the onion, nutmeg, horseradish sauce and lemon zest.
- Add plenty of seasoning then divide the mixture into four.
- Shell and mash the eggs and blend with the mayonnaise, parsley and seasoning.
- Divide each piece of minced lamb in half and fatten into a burger.
- Place a quarter of the egg mixture onto each, cover with the other half and mold together to make four large burgers.
- Cook under a preheated grill or barbecue for about 10 minutes on each side or until cooked through.
- Serve in large burger rolls with salad.
