Chickpea a la King
- 1 Tablespoon Olive Oil
- 1 Large Yellow Onion, Chopped
- 1 Large Red Pepper, Stem And Seeds Removed Then Diced
- 1- 1/2 cup Fresh Mushrooms, Sliced
- 3/4 cups Raw Cashew Pieces, Unsalted
- 3- 1/4 cups Water
- 5 teaspoons Sunflower Seeds (unsalted)
- 3 Tablespoons Chicken-Style Seasoning, Visit Blog For Recipe. Or You May Substitute A Low-sodium, Vegan Chicken-like Seasoning From The Store.
- 1/2 teaspoons Salt
- 1 Tablespoon Onion Powder
- 1 teaspoon Garlic Powder
- 1- 1/2 Tablespoon Cornstarch
- 2 cups Garbanzo Beans, Canned/Drained Or Dried/Cooked And Left Whole
- 1- 3/4 cup Frozen Green Peas, Rinsed
- Heat olive oil in a large skillet over medium heat.
- Then add the onions and red pepper and saute for 3-5 minutes, or until tender.
- Add mushrooms and continue to cook until tender, 3-5 minutes.
- In a high powered blender, blend cashews, water, sunflower seeds, the chicken seasoning, salt, onion powder, garlic powder, and cornstarch until no longer gritty from the nuts.
- This will take about 5-6 minutes.
- Next, pour the cashew mixture into a large saucepan and cook over medium-high heat, stirring continually as it thickens.
- This will take about 5-10 minutes.
- Add the onion mixture, the garbanzo beans and frozen peas.
- Cook for several more minutes.
- Serve over brown rice, toast or egg noodles.
