Meat Pockets with Cheese in Red Sauce
- 3/4 pounds, 3-78 ounces, weight Sirloin
- 2-78 ounces, weight Hard Cheese Of Your Choice, Thinly Sliced
- 13 cups Corn Flour
- 1 teaspoon Pepper
- 1 teaspoon Salt
- 13 cups Butter
- 1 clove Garlic, Chopped
- 1/2 whole Onion, Chopped
- 1/2 cups Tomatoes, Chopped
- 13 tablespoons, 1- 1/2 teaspoons, 1- 1/4 pinches White Wine
- 1.
- Cut sirloin into small slices, approximately 1.5 cm thick.
- 2.
- Lay each slice down horizontally and cut into it (horizontally from the top to make a pocket), but not completely through.
- 3.
- Fill each pocket with a slice of cheese.
- 4.
- Close and secure pockets with a toothpick (wooden or metal).
- 5.
- Mix corn flour with pepper and salt in a plate, roll each pocket in flour.
- 6.
- Over medium heat, saute onion and garlic briefly in butter.
- Once they are softened, add the meat and fry on each side for 8-10 minutes over medium flame.
- 7.
- Once the meat is done to your desired doneness, add tomatoes and wine, stir and gently simmer for about 5 minutes.
- Serve hot with boiled potatoes.
