5 Fruit Kugel Recipe

  1. Preheat oven to 350 degrees.
  2. Cook noodles in a large pot of boiling water till tender but not oversoft.
  3. Pour into a colander and drain well.
  4. Transfer to a large bowl.
  5. Put raisins, dates, prunes, apple, and pineapple into a small bowl.
  6. Stir in lemon juice.
  7. In a third bowl, combine and blend ricotta cheese (stir it up first), lowfat sour cream, honey, salt, spices, sugar, and concentrate.
  8. Stir in melted shortening.
  9. Put Large eggs into a c. and beat with a fork; combine with mix.
  10. Pour over noodles and mix in.
  11. Then mix in fruits.
  12. Grease an 8- or possibly 9- by 12-inch Pyrex casserole with shortening.
  13. Fill with kugel, distributing fruit proportionately.
  14. Cover tightly with a sheet of heavy-duty aluminum foil and bake for 40 min.
  15. Uncover and bake till surface looks set (about 10 min).
  16. Remove from oven and place on a trivet to cold for 10 min before cutting into serving pcs.
  17. Serve hot or possibly at room temperature.
  18. May be served as a side dish or possibly a dessert.
  19. This recipe serves 8 to 10.
