Italian Chicken Cacciatore
- 5 cups Chicken, Cubed (about 3 Lbs.)
- 1/2 cups Olive Oil
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 1/4 teaspoons Paprika
- 1 whole Onion, Diced
- 1 whole Green Pepper
- 1 clove Garlic, Minced
- 3- 1/2 cups Canned Tomatoes
- 1 cup Mushrooms, Diced
- 1/2 cups Sherry Wine Optional
- Brown chicken in olive oil.
- Add seasonings and all vegetables except tomatoes and mushrooms.
- Saute until soft.
- Stir in tomatoes and mushrooms.
- Place mixture in a large greased casserole.
- Bake for 30 to 35 minutes at 350 degrees.
- You may add sherry wine before serving, if desired.
- Its still very good without it.
