Garlic Chicken Italiano

  1. Combine olive oil, salt, and pepper in a small bowl.
  2. Seperate the garlic into cloves and peel.
  3. Mince 4 cloves and stir into the olive oil mixture.
  4. Place chicken on a rack in a shallow roasting pan.
  5. Brush chicken with the oil mixture.
  6. Squeeze lemon juice all over chicken.
  7. Place squeezed lemon halves in the cavity of the chicken.
  8. Tie drumsticks to tail and twist wing tips under the back.
  9. When tied and tucked place breast side up on rack.
  10. Pour the wine and wter into the pan, and add the remaining peeled garlic cloves.
  11. Roast chicken at 400 degrees F for 1 1/4 - 1 1/2 hours or until thoroughly cooked and a meat thermometer inserted registers 180 degrees -185 degrees F.
  12. Remove chicken from the oven and cover with foil.
  13. Let stand for 5-10 minute
  14. Remove garlic from pan with a slotted spoon and skim the fat from the pan juices.
  15. Carve chicken and pour some of the pan juices over chicken.
  16. Serve garlic cloves with chicken and pass remaining juices.
