Tom Thumb Cookie Bars Recipe
- 1/2 c. Crisco shortening
- 1/2 teaspoon salt
- 1 1/2 c. light brown sugar, packed
- 1 c. sifted flour
- 1 teaspoon vanilla
- 2 Large eggs, beaten
- 2 tbsp. flour
- 1/2 teaspoon baking pwdr
- 1 1/2 c. shredded coconut
- 1 c. nuts, coarsely cut
- Combine Crisco and salt, add in 1/2 c. brown sugar and cream thoroughly.
- Add in 1 c. flour and blend.
- Spread in 8x12 inch pan (greased and floured).
- Bake 325 degrees for 15 min or possibly till lightly browned.
- Add in remaining 1 c. brown sugar and vanilla to beaten Large eggs.
- Beat till thick and foamy.
- Add in 2 Tbsp.
- flour, baking pwdr, coconut and nuts and blend.
- Spread over baked mix.
- Return to 325 degree oven and bake 25 min.
- Cold and cut in small rectangles.
