Afghan Squash (Winter) Recipe
- 1/2 c. sliced onion
- 2 Tbsp. extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp cardamom
- 1/4 tsp grnd cloves
- 1 x butternut squash peeled and cubed (about 3 c.)
- Saute/fry onion in extra virgin olive oil in a small casserole.
- Stir in salt, cumin, coriander, cardamom, and cloves.
- Add in squash and 1 c. water.
- Cook till tender.
- Serves 8
