Lemon Gelato

  1. Weigh out all the ingredients
  2. In a medium saucepan heat the milk and sugar until the sugar has dissolved DO NOT BOIL.
  3. Transfer to a jug or bowl and let it cool to room temperature
  4. Put the lemon juice in a jug and stir in the liquid glucose then pour into the milk & sugar mix and stir.
  5. Put in the fridge for 30 minutes
  6. Turn ice cream maker on paddles turning pour the mixture in and let it run for 55-60 minutes then turn off take paddles out and serve immediately or put in a container & freeze.
  7. I got 885g
