Lemon Gelato
- 375 ml fresh lemon juice or less if don't want it too tangy. Make up with water to 375 ml
- 375 ml Milk 2% I used semi skimmed
- 165 grams caster sugar this sugar dissolves quicker
- 30 grams Liquid glucose
- Weigh out all the ingredients
- In a medium saucepan heat the milk and sugar until the sugar has dissolved DO NOT BOIL.
- Transfer to a jug or bowl and let it cool to room temperature
- Put the lemon juice in a jug and stir in the liquid glucose then pour into the milk & sugar mix and stir.
- Put in the fridge for 30 minutes
- Turn ice cream maker on paddles turning pour the mixture in and let it run for 55-60 minutes then turn off take paddles out and serve immediately or put in a container & freeze.
