Stir-Fry Salad with Rice
- 1 cup instant white rice, uncooked
- 1 Tbsp. oil
- 1 lb. boneless skinless chicken breasts, cut into strips
- 3 cups assorted cut-up vegetables (broccoli, red pepper, carrots and snow peas) Target 2 lb For $3.00 thru 02/06
- 1 pkg. (300 g) salad greens
- 1/2 cup Kraft Calorie-Wise Zesty Italian Dressing
- 2 Tbsp. soy sauce
- Cook rice as directed on package.
- Meanwhile, heat oil in large nonstick skillet.
- Add chicken; cook and stir 5 min.
- or until cooked through.
- Add vegetables; cook an additional 2 min.
- or until vegetables are crisp-tender.
- Place rice in large bowl.
- Add chicken mixture, salad greens, dressing and soy sauce; toss to coat.
