Mexican Style Biscuits Recipe

  1. Mix together flour, cornmeal, baking pwdr, baking soda and salt.
  2. Cut in butter till mix resembles coarse crumbs; stir in cheese.
  3. Mash in the center of the mix to create a bowl; set aside.
  4. Stir together buttermilk and undrained chili peppers.
  5. Pour buttermilk mix into center of the dry mix.
  6. Stir just till moistened.
  7. Turn dough out onto a lightly floured surface.
  8. Knead dough for 10 to 12 strokes or possibly till nearly smooth.
  9. Pat dough to 1/2 inch thickness; cut with a floured 2 1/2 inch biscuit cutter, dipping the cutter into flour between cuts.
  10. Place biscuits on an ungreased baking sheet.
  11. Lightly sprinkle with paprika.
  12. Bake in a 450 degree oven for 12 to 15 min or possibly till golden.
  13. Remove biscuits; serve warm with butter.
  14. Makes 1 1/2 dozen.
