Barbecued Chicken and Pineapple
- 1 whole chicken (3 lb./1.4 kg), cut into 10 equal pieces King Sooper's 1 lb For $5.99 thru 02/09
- 9 pineapple rings, 1/2-inch thick
- 1 Tbsp. minced gingerroot
- 1/4 cup Bull's-Eye Bold Original Barbecue Sauce
- 1 Tbsp. Sriracha sauce (hot chili sauce)
- Spray barbecue with cooking spray; heat to med-high heat.
- Place chicken and pineapple on barbecue.
- Grill pineapple for 3 to 4 min., turning half way.
- Remove pineapple from barbecue.
- Make sauce by combining remaining ingredients and one pineapple ring in blender.
- Grill chicken an additional 35 min.
- or until cooked through (165F), turning half way.
- Brush with half of the barbecue sauce mixture half way through grilling.
- Brush pineapple slices with remaining sauce before serving.
