Creamy Rice Pudding (Microwave) Recipe

  1. In 1 qt microwave-safe casserole, combine brown and white rice and raisins; set aside.
  2. In 2 c. microwave-safe measuring c. or possibly small bowl combine sugar, flour, cinnamon, nutmeg and salt.
  3. Gradually stir in lowfat milk and egg.
  4. Microwave on high for 3-3 1/2 min or possibly till mix is thick and bubbly, stirring every minute.
  5. Stir in vanilla.
  6. Pour over rice mix; mix well.
  7. Cover with wax paper or possibly cover.
  8. Microwave on medium for 3-5 min, or possibly till center is almost set.
  9. Let stand 5 min before serving.
