My Chorizo and Chilli Beef Bake with Homemade Chips.
- 1 large onion, chopped
- 400 grams minced Beef
- 1 Chirizo sliced
- 1 Salt & Pepper to taste
- 2 red chillies sliced or mashed very small
- 2 can chopped tomatoes
- 2 Beef boulion or cubes
- 2 tbsp Tomatoe puree
- 2 tbsp olive oil
- 2 clove garlic crushed
- 1 green chilli chopped small
- 1 Sweet Red Pepper
- 1/2 cup boiling water
- Heat oil in a deepfrypan or Wok, which i mainly use, and fry onions for 2 minutes then add garlic
- Add the crushed chilli and fry for 1 minute
- Addi the beef to the fry and cook until the beef has no red colour
- While the mince is frying cut your chirizo into slices and add to the fry.
- Add the tomatoes to the fry and stir in,add salt pepper and water then the beef cubes stir then turn down the heat and simmer for 10 mins.
- Tranfer to a casserole dish or ovenproof dish and bake on gas 6 or 170 elec for 45 minutes .
- Add the chopped red peppers and tomatoe puree, stir in just before serving so you have a crunchy texture instead of soggy pepper.
- Serve with lovely thick homemade Chips, or fries, serve in bowls and chips on side for dipping, in your chilli bake.
