Tex-Mex Eggs Migas With Cheddar and Jalapeno

  1. Dice onion and seeded jalapeno.
  2. Cut tortilla into thin strips.
  3. Fry tortilla strips for 1-2 min over medium heat then add jalapeno and onion for 3-4 minute.
  4. Whisk first 4 ingredients then add to pan.
  5. Stir often for 2 minutes then add cheddar until melted.
  6. Plate and top with salsa and sour cream.
