Mrs. Faye's Chocolate Pie
- 1 refrigerated pie crust (baked and cooled)
- 34 cup sugar
- 3 tablespoons flour
- 12 teaspoon salt
- 2 cups milk
- 2 12 tablespoons cocoa
- 2 egg yolks (save whites for meringue)
- 1 teaspoon vanilla
- 2 12 tablespoons butter
- 2 egg whites (yolks for pie filling)
- 14 teaspoon cream of tartar
- 6 tablespoons sugar
- Combine sugar, flour, salt and cocoa with milk.
- Cook over medium low heat until thickened.
- Beat egg yolks and add extremely slow to cocoa mixture, Stirring quickly while adding so the yolks don't cook separately.
- Continue to cook over low medium low heat to thicken a bit more.
- (About 15 to 20 minutes).
- Remove from heat and add vanilla.
- Drop in butter, but do so in dots or make sure butter is softened.
- Stir well.
- Pour into baked and cooled pie crust.
- Whip egg whites with cream of tartar.
- Add sugar a little at a time and whip until stiff peaks form.
- Spread on pie, making sure to seal the edges of the meringue to the pie crust.
- Bake at 350 for about 15 minutes, until meringue is lightly browned.
