Sarah's Caramel Apple Cake

  1. Cream the sugar, oil, lemon juice, vanilla and eggs together.
  2. Add the dry ingredients.
  3. Fold in the apples and nuts.
  4. Bake in a greased and floured 9x13 inch pan for 1 1/2 hours at 325 degrees - start checking the cake at 60 minutes to check for doneness and after that in 10 minute intervals.
  5. To make frosting: Pour all ingredients into a saucepan and bring to a boil.
  6. Boil for an additional 2-3 minutes - stir constantly!
  7. Pour the frosting over the hot cake - I let it cool just a bit before pouring the frosting on.
