Empanadas (NFL Championship Game)
- 1 lb venison or beef ground meat
- 1/2 lb ground pork
- 1/2 lb bacon
- 2 long hot peppers
- 1 onion
- 6 clove garlic
- 2 packages sazon
- 2 tbsp sofrito (tomato cooking base)
- 2 tbsp recaito (cilantro cooking base)
- 1 salt & pepper
- 1 packages empanada shells
- Chop up the bacon & cook in pan (not crisp) & remove bacon & set aside
- Leave bacon fat in & cook the ground venison or beef & the ground pork & set aside leaving grease in the pan
- Dice peppers, onions & garlic & cook in the meat fat.
- Add all the meat back in with the sazon, sofrito & recaito & cook for a minute & salt & pepper for taste.
- Fill the empanada shell in the middle with just enough room to fold over the edges & pinch
- Fry empanadas in 350 canola oil for 3 minutes on each side.
