Tuscan Chicken Bites
- 1 small boneless skinless chicken breast half (4 oz.), cooked, finely chopped (about 3/4 cup)
- 1/4 cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream
- 2 green onions, finely chopped
- 2 Tbsp. finely chopped roasted red peppers
- 1 tsp. grated lemon zest
- 1/2 tsp. chopped fresh rosemary
- 24 cracked pepper and olive oil woven wheat crackers
- 24 baby arugula leaves
- Combine all ingredients except crackers and arugula; cover.
- Refrigerate at least 1 hour.
- Top each cracker with 1 arugula leaf and 2 tsp.
- of the chicken mixture just before serving.
