Simple Spinach Tacos
- 1 whole Red Onion, Sliced
- 8 ounces, weight Baby Spinach
- 1 teaspoon Crushed Red Pepper
- 6 whole Corn Tortillas
- 4 ounces, weight Queso Fresco, Crumbled
- 1 Tablespoon Buffalo Wing Sauce (or Other Hot Sauce)
- Saute the onions in a skillet over medium heat until golden brown.
- Turn heat to low and add spinach and crushed red pepper.
- Cook until the spinach is wilted.
- Serve over warm corn tortillas, topped with queso fresco and Buffalo wing sauce.
