Banana Jam Recipe
- 2 1/2 c. Honey
- 3 c. Water
- 3 x Lemons , Juice of Thinly sliced rind of 3 lemons
- 8 x Bananas, mashed
- 3 whl cloves, (up to 4)
- 1 piece dry green ginger
- Combine honey and water in saucepan.
- Boil for 12 min Add in lemon juice, lemon rnd, bananas and spices.
- Simmer for 45 min or possibly to desired consistency, stirring frequently.
- Remove ginger.
- Spoon into warm stenlized 8-oz lars, leaving 1/4 inch headspace: seal with 2-piece lids.
- Process in boiling water bath for 20 min.
- Yield: 7 - 8-oz jars.
