Japanese Pickled Cauliflower Coca-Cola

  1. In a large bowl, combine the cauliflower flowerets and bell pepper strips.
  2. Cover with boiling water.
  3. Let stand for 2 minutes; drain thoroughly.
  4. Add the celery.
  5. In a small pan, heat the Coca-Cola, wine/white vinegar, sugar, and salt.
  6. Pour over vegetables.
  7. Toss lightly with a fork, and pack into 1-quart glass jars.
  8. Push down lightly so the liquid covers the vegetables.
  9. Cover and chill overnight.
  10. This keeps in the refrigerator for several days.
