Piquant Orange Sauce
- 1 tsp. vegetable oil
- 1 large clove garlic, minced
- 2 tsp. minced fresh ginger
- 1 cup orange marmalade
- 2 tsp. drained capers
- Pinch of cayenne
- In small saucepan, heat oil over medium-low heat.
- Add garlic and ginger and cook, stirring, 1 minute.
- Remove from heat.
- In blender, combine marmalade, capers, cayenne and 3 tablespoons water.
- Add garlic mixture and blend until smooth.
- If sauce is too thick (it should be pourable), add a little water.
