Mexican Salad Recipe
- 1/2 head lettuce
- 1 can kidney beans (dark red), chilled
- 1 lg. tomato
- Green olives (about 3 per person)
- 1 c. shredded Cheddar cheese
- 3 green onions
- Catalina dressing
- 2 c. Fritos corn chips
- Cut lettuce into bite size pcs.
- Drain and rinse kidney beans.
- Cut up tomato, green olives, and green onions.
- Place all in large bowl and mix with Catalina dressing.
- Add in Fritos corn chips before serving.
