Kiwi Cobbler
- 10 mint leaves
- 1 kiwi, peeled and quartered
- 1 tablespoon sugar
- 1/2-inch piece of a vanilla bean, split
- Ice
- 1 1/2 ounces silver tequila
- 1 ounce chilled club soda
- In a cocktail shaker, muddle the mint, kiwi, sugar and vanilla.
- Add ice and the tequila; shake well.
- Pour into a highball glass, top with the soda and stir gently.
