Veal Cutlets With Cheese Recipe

  1. Place each cutlet between 2 pcs of waxed paper and lb.
  2. to flatten.
  3. Season the flour with salt and pepper and use to coat the veal.
  4. Heat the oil and butter in a large skillet.
  5. Add in the veal and saute/fry for about 3 min on each side.
  6. Combine the ham and parsley and spread over the veal.
  7. Sprinkle with the cheese.
  8. Stir the broth into the pan juices and spoon a little over each portion.
  9. Cover and simmer gently for 5 min or possibly till the veal is tender and the cheese is melted.
  10. Place on a warmed platter and keep warm.
  11. Bring the pan juices to a boil and cook briskly till reduced.
  12. Pour over the veal.
  13. Yields: 4 servings.
