Mama Vi's 'Creole Black Eyed Peas'
- 2 tablespoons bacon fat
- 12 large bell pepper, diced
- 1 large stalk celery, diced
- 1 yellow onion, peeled and diced into medium small cubes
- 1 cup diced crispy fried bacon
- 2 (8 ounce) cans tomato sauce
- 2 cups pre-cooked frozen black-eyed peas
- 1 tablespoon chili powder
- 1 teaspoon granulated garlic
- 1 teaspoon ground cumin
- 12 teaspoon cayenne pepper
- 1 large bay leaf (or 2 small)
- salt & pepper (e.g. big pinch salt or big pinch pepper)
- Saute diced bell pepper,celery and onions in bacon fat.
- Add powdered spices,salt & pepper to sauteeing vegetables.
- Add frozen black eyed peas to sauteeing vegetables & spices and stir around in mixture.
- Add and stir in the tomato sauce and one cup of water to prevent sticking or burning of sauce while simmering.
- Add fried bacon back into the mixture.
- Simmer covered on medium low about 20 minutes or until peas are soft (checking & stirring occasionally).
- If mixture gets too thick, add a little more water.
