Sauteed Peppers
- 2 tbsp. olive oil
- 1 red pepper
- 1 yellow pepper
- 1 onion
- 3 plum tomatoes
- kosher salt
- ground pepper
- 2 tbsp. chopped fresh basil
- Place skillet over medium heat and add oil once pan is hot.
- Add peppers and onions and saute for 10 minutes.
- Stir in tomatoes, cover, and cook on low for 10 minutes, until vegetables are very tender and saucy.
- Season with kosher salt and pepper to taste.
- Stir in basil.
