Sauteed Peppers

  1. Place skillet over medium heat and add oil once pan is hot.
  2. Add peppers and onions and saute for 10 minutes.
  3. Stir in tomatoes, cover, and cook on low for 10 minutes, until vegetables are very tender and saucy.
  4. Season with kosher salt and pepper to taste.
  5. Stir in basil.
