Chicken and Pasta
- 1 teaspoon extra-virgin olive oil
- 1 clove garlic, crushed
- 1 teaspoon crushed red pepper flakes
- 1/2 boneless skinless chicken breast, cut into bite-size pieces
- 1 cup canned stewed tomatoes
- 2 cups whole-wheat pasta, cooked
- 1/4 cup roughly chopped fresh basil leaves
- 1 tablespoon grated Parmesan
- Heat oil in a small wok or saute pan over medium heat.
- When oil is hot, add garlic and saute until translucent.
- Stir in red pepper flakes and saute for 1 minute.
- Add chicken and tomatoes and bring to a simmer; simmer for 4 minutes.
- Add pasta and toss to combine with sauce.
- Remove from heat and stir in basil.
- Divide among 2 plates, sprinkle with Parmesan, and serve.
