Crostini Giardino -- Toasted Bread and Fresh Vegetables

  1. Toast the thick sliced Italian bread in a broiler, making sure you toast both sides.
  2. Chop all the ingredients, except the olive oil fine, and mix together well.
  3. Add a touch or so of olive oil to the mixture after draining off some of the liquid of the vegetables.
  4. Salt and pepper to taste.
  5. Spread a tablespoon or so on each slice of toasted bread.
  6. Serve while toast is still warm and crisp.
