Crostini Giardino -- Toasted Bread and Fresh Vegetables
- 1 loaf Italian bread, sliced
- 1 lg. tomato, chopped finely
- 1 md. onion, chopped finely
- 2 tbsp. arugula, chopped fine
- 1 tsp. fresh basil, chopped fine
- Olive oil
- Salt and pepper to taste
- Toast the thick sliced Italian bread in a broiler, making sure you toast both sides.
- Chop all the ingredients, except the olive oil fine, and mix together well.
- Add a touch or so of olive oil to the mixture after draining off some of the liquid of the vegetables.
- Salt and pepper to taste.
- Spread a tablespoon or so on each slice of toasted bread.
- Serve while toast is still warm and crisp.
