Bacon and Mozzarella Stuffed Chicken

  1. Preheat oven to 350 degrees F.
  2. Rinse chicken and pat dry with a paper towel.
  3. Cut a pocket into the side of each chicken breast and then stuff each breast with 2 slices of bacon and a handful of cheese.
  4. Bake in a glass dish sprayed with cooking spray for about thirty minutes and then check every five or six minutes.
  5. Ours was done in about forty minutes.
  6. Feel free to add seasonings, but between the bacon and cheese, we didnt feel like it needed anything.
