Beet Salsa
- 3 whole Medium Beets, Peeled And Chopped Into Small Cubes
- 1 whole Jalapeno Pepper, Seeded And Finely Chopped
- 1/2 whole Red Onion, Chopped
- 1/2 cups Fresh Cilantro, Chopped
- 2- 1/2 Tablespoons Lime Juice
- 2 teaspoons Honey
- 1/2 teaspoons Salt
- Bring a large pot of water to a boil.
- Submerge beets to blanch for 4-5 minutes.
- Remove and strain into a large colander and rinse immediately with cold water.
- Allow to drain for 5-10 minutes.
- Place beets into a large bowl and add jalapeno, red onion, and cilantro.
- In a small bowl, whisk together lime juice, honey and salt.
- Add liquid mixture to beet mixture and fold to combine.
- Refrigerate for 30 minutes prior to serving.
