Beet Salsa

  1. Bring a large pot of water to a boil.
  2. Submerge beets to blanch for 4-5 minutes.
  3. Remove and strain into a large colander and rinse immediately with cold water.
  4. Allow to drain for 5-10 minutes.
  5. Place beets into a large bowl and add jalapeno, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, honey and salt.
  7. Add liquid mixture to beet mixture and fold to combine.
  8. Refrigerate for 30 minutes prior to serving.
