Many Vegetable Soup
- 2 cups chicken broth
- 12 cup coarsely chopped carrot
- 12 cup chopped celery
- 12 cup chopped onion
- 12 cup chopped mushroom
- 12 cup chopped broccoli
- 12 teaspoon dried tarragon
- 1 12 cups sliced asparagus
- 1 cup plain yogurt
- 2 tablespoons cornstarch
- salt and pepper
- Combine broth and vegetables except asparagus.
- Cover and cook on high for 3-4 hours, adding asparagus during last 20 minutes.
- Stir in combine yogurt and cornstarch, stirring 2-3 minutes.
- Season to taste with salt and pepper.
