Goulash
- 1 lb stew meat
- tbsp olive oil
- 1 pinch pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 1/2 tsp oregano
- 1 tbsp butter
- 1/2 medium onion chopped roughly
- 1/4 cup all purpose flour
- 3 clove fresh smashed garlic
- 1/2 tsp italian seasoning
- 1 tsp salt
- 2 cup chicken stock
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 2 potatoes
- 1/4 cup tomato sauce
- 1/4 tsp ground mustard
- 2 tbsp barbecue sauce
- 1/8 cup brown sugar
- Trim and Cut stew meat into cubes (i used top sirloin).
- Season with salt, pepper, oregano, garlic powder, and paprika.
- sear in olive oil on med high heat until golden brown.
- Set meat aside.
- Saute onions and smashed fresh garlic in same pan scraping brown bits from meat.
- Add butter and seasonings and after a minute add flour and stir for 2 minutes.
- Stir in chicken stock, paprika, thyme, oregano, salt and pepper and bring to a low boil.
- Peel and dice two russet potatoes.
- Add ground mustard, brown sugar, tomato sauce, and barbeque sauce.
- Toss everything in the crock pot on high for 3 hours and serve over pasta or rice.
- You can also put everything in a dutch oven or large pot and cook on medium for about 2 hours stirring occasionally.
