Mexa S'mores

  1. Preheat the oven to 400 degrees F.
  2. Simmer the cream in a small saucepan.
  3. Remove from the heat.
  4. Add the chocolate and whisk until smooth.
  5. Set aside.
  6. Spray a baking sheet with nonstick cooking spray.
  7. Place 6 of the Maria crackers on the baking sheet and top each with half a marshmallow.
  8. Bake until the marshmallow starts to brown, about 5 minutes.
  9. Carefully arrange the crackers on a serving dish.
  10. Top each with 1 tablespoon chocolate ganache and another Maria cracker.
  11. Serve warm or at room temperature.
