Salmon With Cilantro Mango Sauce
- 1 medium (1 cup) fresh mango, peeled, coarsely chopped
- 3/4 cup buttermilk*
- 1/4 teaspoon salt
- 2 tablespoons chopped fresh cilantro leaves
- 3 tablespoons Land O Lakes Butter
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic salt
- 1/8 teaspoon ground red pepper (cayenne)
- 4 (4-ounce) salmon filets, skin removed
- Hot cooked rice, if desired
- Combine all sauce ingredients except cilantro in food processor bowl fitted with metal blade.
- Pulse until pureed and smooth.
- Stir in chopped cilantro.
- Set aside.
- Melt butter in 12-inch nonstick skillet over medium heat until sizzling.
- Stir in spices.
- Add salmon; cook 5-6 minutes or until lightly browned.
- Turn salmon; continue cooking 5-6 minutes or until salmon flakes easily with fork.
- Serve with mango sauce and rice, if desired.
