Beef Skewers With Orange and Garlic
- 3 tablespoons white wine
- 2 tablespoons olive oil
- 3 garlic cloves, finely chopped
- 1 orange, juice of
- 1 lb top sirloin steak, cubed
- salt and pepper
- 1 lb white pearl onion, halved
- 2 orange bell peppers, seeded and cut into squares
- 8 ounces cherry tomatoes
- Mix the wine, olive oil, garlic and orange juice in a shallow non-metallic dish.
- Add the cubes of beef, season to taste with salt and pepper and toss to coat.
- Cover with plastic wrap and let marinate in the refrigerator for 2-8 hours.
- If using wooden skewers, soak them in water to prevent burning.
- Preheat the broiler or grill to high.
- Drain the beef, reserving the marinade.
- Thread the beef, onion, bell pepper and tomatoes alternately onto skewers.
- Cook the skewers under the hot broiler (or on grill), turning and brushing frequently with the marinade for 10 minutes or until cooked through.
- Transfer to warmed serving plates and serve immediately.
