Lee's Baja Fish Tacos

  1. Battered fish:.
  2. MIx flour, Old bay seasoning,Mexican oregano, salt,onion powder,chipotle, and garlic together, pour beer in a separate container and let bubbles subside.
  3. Add egg and Beer to dry mixture.
  4. If batter seems too dry add a little more beer until the consistency is that of pancake batter.
  5. Dip each strip of fish in batter and deep fry for about 90 sec to 2 min till the batter is a golden brown color.
  6. Drain on paper towels.
  7. Taco filling:.
  8. Thinly slice the cabbage into a slaw type cut and adding the radishes and jalapenos.
  9. Add vinegar and set aside Slice avocados and set aside and use as an optional item.
  10. Sauce:.
  11. Combine the mayonnaise, crema, 1 tsp Chipotle, garlic, and the juice of 1/2 lime in a small bowl.
  12. Taste and adjust the seasoning.
  13. The chipotle will give this sauce an excellent smoky flavor.
  14. When adding start with a 1/2 tsp and taste.
  15. If too hot, add a little bit more mayonnaise and Crema.
  16. If not hot enough add a 1/4 tsp more and test again.
  17. If still not hot enough add the remaining 1/4 tsp of chipotle.
  18. Cut the remaining 2 1/2 limes into wedges and set aside.
  19. Assembly:.
  20. Warm tortillas on very hot cast iron skillet and set on plate.
  21. Add battered fish, squeeze lime wedge over fish, add taco filling and a ribbon of sauce.
  22. Add avocado if desired.
  23. Enjoy!
