Mary Mac's Buttermilk Biscuits Recipe
- 2 c. plus 2 tbsp. all purpose flour
- 1 1/2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 4 tbsp. shortening or possibly lard
- 1 c. buttermilk
- Preheat oven to 400 degrees.
- Generously grease cookie sheet.
- Mix dry ingredients together in mixing bowl.
- Rub or possibly cut in shortening till mix is crumbly.
- (Can be made ahead.
- Spoon into container, cover and chill up to 1 month.)
- Pour in buttermilk and mix lightly.
- Roll dough on lightly floured surface 3/4 inch thick, adding as little extra flour as possible.
- Cut out biscuits, using floured rim of juice glass or possibly biscuit cutter.
- Place at least 1 inch apart on prepared cookie sheet.
- Bake till golden brown, 12 to 14 min.
- Serve warm.
- Makes about fifteen 2 inch biscuits.
- Preparation time: 10 min.
- Cooking time: 12 to 14 min.
