Jicama Citrus Slaw
- 1/3 cup mayonnaise
- 2 tablespoons cider vinegar
- 1 (11-ounce) can mandarin oranges, drained and liquid reserved
- 2 cups shredded jicama
- 2 cups shredded red cabbage
- Salt and freshly ground black pepper
- In a large bowl, combine mayonnaise, vinegar and 2 tablespoons liquid from mandarin orange can.
- Add jicama, red cabbage and mandarin oranges.
- Toss to combine.
- Season, to taste, with salt and pepper.
