Vickys Blueberry Fritters
- 120 grams gluten-free / plain flour
- 4 tbsp granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/8 tsp xanthan gum if using a gluten-free flour blend
- 1 tsp bicarb / baking soda
- 150 ml milk alternative such as rice / coconut milk etc plus 1 tbsp
- 1 tbsp white or cider vinegar
- 1/2 tsp vanilla extract
- 200 grams fresh blueberries
- 4 tsp oil
- Mix the flour, sugar, baking powder, xanthan gum if using and salt in a bowl
- In a cup mix together the baking soda, 1 tbsp milk, vanilla and the vinegar to make a fizzy leavener
- Make a well in the flour and add the rest of the milk and the vinegar mixture, stirring until a smooth doughy batter is formed
- Fold in the blueberries.
- It's okay if some break or mash while stirring.
- Let the dough stand a minute while you heat the oil in a frying over medium heat
- Turn the heat down to medium low and drop in the dough by tablespoon, cooking for about 2 minutes per side, until lightly browned.
- Bubbles will s5art to pop on top when they'recready to turn.
- 3 at a time is plenty and it's a good idea to do a test one to make sure your oil is at the right temp and to adjust the cooking time so the middle is cooked through
- When cooled dust in powdered sugar or make a glaze from powdered sugar and a little milk.
- Yummy!
