Better Burgers - Vegetarian
- 1 12 cups finely chopped walnuts
- 14 cup chopped red bell pepper
- 14 cup chopped green bell pepper
- 12 can chopped green chili
- 3 cloves garlic, minced
- 4 scallions, chopped
- 14 cup chopped carrot
- 1 14 cups thawed frozen spinach, squeezed dry and chopped
- 1 14 cups whole wheat bread crumbs
- 1 tablespoon tarragon, chopped
- 2 tablespoons chopped celery
- 14 cup mayonnaise
- 14 teaspoon black pepper
- 2 tablespoons olive oil
- Combine all the ingredients, except the olive oil, and combine well.
- Shape into 6 patties.
- Heat the oil in a skillet or griddle and saute the patties for about 5 minutes on each side.
- Serve with your favorite condiments: tomatoes, onions, lettuce, etc.
- Feel no guilt about eating such delicious and nutritious burgers.
