Golden Tomato Preserves
- 2 lb. yellow pear tomatoes
- boiling water
- 3 c. sugar
- juice of 2 oranges
- grated rind of 1 orange
- grated rind of 1 lemon
- 2 lemons, thinly sliced
- Select
- fully ripe tomatoes;
- cover with boiling water. Let stand a
- few
- seconds, then drain and dip into cold water. Peel carefully
- and
- place in layers in bowl, sprinkling sugar over each
- layer.
- Cover
- and
- let
- stand
- overnight
- (keep in refrigerator).
- Drain
- off juice and sugar and heat to boiling with orange
- juice,
- orange
- rind
- and lemon rind.
- Boil until syrup spins
- a
- thread.
- Add tomatoes and sliced lemons.
- Cook until syrup
- is thick.
- Pour into sterile jelly jars and seal. Place in boiling water bath for 25 minutes.
