Golden Tomato Preserves

  1. Select
  2. fully ripe tomatoes;
  3. cover with boiling water. Let stand a
  4. few
  5. seconds, then drain and dip into cold water. Peel carefully
  6. and
  7. place in layers in bowl, sprinkling sugar over each
  8. layer.
  9. Cover
  10. and
  11. let
  12. stand
  13. overnight
  14. (keep in refrigerator).
  15. Drain
  16. off juice and sugar and heat to boiling with orange
  17. juice,
  18. orange
  19. rind
  20. and lemon rind.
  21. Boil until syrup spins
  22. a
  23. thread.
  24. Add tomatoes and sliced lemons.
  25. Cook until syrup
  26. is thick.
  27. Pour into sterile jelly jars and seal. Place in boiling water bath for 25 minutes.
