Flank Steak With Peppers and Soy Sauce
- 4 cups cooked rice (I use instant rice, white or brown)
- 4 teaspoons canola oil
- 1 14 lbs flank steaks, thinly sliced
- 4 large assorted bell peppers (any color)
- 1 large onion, sliced into half moons
- 4 garlic cloves, sliced
- 5 tablespoons low sodium soy sauce
- Cook rice according to directions, when finished put in a casserole dish.
- Heat 2 teaspoons canola oil in large skillet over medium-high heat.
- Add beef and cook until browned.
- Drain meat and transfer to casserole dish, lying over the rice.
- Heat 2 teaspoons canola oil in same skillet.
- Add peppers, onion and garlic and cook until peppers and onion is soft.
- Transfer to casserole dish, lying over the meat.
- Drizzle with soy sauce, can adjust amount if needed.
- If necessary, you can put the casserole dish in oven on 200 to keep warm until ready to serve.
- Salt and pepper to taste.
